Our main aim is to encourage the mineral expression in the wine that it naturally picks up from the stony Saint Sulpice hill where the decomposing granite rock is just under a thin layer of soil. In a nutshell, a shorter and cooler fermentation is carried out with no airing of the finished wine. We are the only producer in Cote Roannaise to have vines on this magnificent granite hill.
